Personal headcanon says Hermione took a job teaching Muggle Studies and Community Organization at Beauxbatons for a while, before returning to Hogwarts as Muggle Studies professor and head of Hufflepuff House until Minerva gives up Gryffindor (and the headmaster's seat) by dying, at which point Hermione becomes Gryffindor Head of House after a long career as one of the premier agitators for social change in the Wizarding World, or something like that.
