I'm fine with Edward's eyes fluctuating between honey and butterscotch, say, or even gold and light golden brown, without it being a big deal. My fiance's eyes fluctuate between blue-gray and dark blue and green and all sorts of greeny hazel, and I've had a lot of friends whose eyes do similar things. Fluctuating between gold and black with no one noticing, though, is too much to swallow. If someone's brown eyes changed to blue, that would be weird, and very noticeable.
When I write fiction, I write about eye color because I notice eye color. It's a very important trait to me, so it's gonna be in my writing. I don't find it particularly easy to describe, because I want to get the shade/s exactly perfectly right, especially if I'm writing from the perspective of one person who's attracted to another.
Some people might not notice brown eyes or blue eyes or hazel eyes -- but I think they would notice yellow eyes. I think most people would also notice black eyes on a white person, and the fact that those eyes actually change to yellow, especially in a school of only 350ish kids who see each other every day. Plus, lots of girls think Edward is dreamy -- they would notice his eyes pretty much immediately, like Bella does. We gloss over things in our lives that don't stand out, that aren't different, but yellow eyes are very different.
One thing that irks me is how easily Meyer could have gotten around this while keeping the yellow eyes. Maybe Jasper could mind-whammy people to look away from them. Vampire eyes dissolve regular contacts because of the venom, but Dr. Cullen could have created special contacts for them. There could be some kind of sparklefield all vampires have that make normal people unable to register details of their appearance, but Bella's immune to it.
