I'm glad that even Twilight enabled you to learn something! :) Since Edward's eyes explicitly fluctuate, I think it's sort of reasonable to describe them using a variety of yellowish shades as he's going through different times of the month (metaphorically speaking). Probably a common mistake for a lot of writers, eg. fanficcers describing Harry's eyes as both "emerald" and "moss" even though these are different shades.
It's not always easy to notice someone's eye colour--writers find eye colour easier to describe than the precise slant of someone's cheekbones or the exact set of their nose, but people don't always notice. Especially if the other person has deep-set eyes. The Cullens also give out that all of them are related except for the ones who are dating each other, I think Edward/Alice/Emmett and Rosalie/Jasper as two families. I agree with you that it's a horrible plot hole that nobody but Bella the horribly unobservant notices, and it might have been nice if the book had given a nod in the direction of fancy contact lenses (you can get pure black ones there as well as yellow-brown and all the rest).
