I really don't understand your argument that the eye colour destroys the story. It certainly doesn't for me. I'm sure you're right when you say that the likelihood of unrelated, white people in a family such as the Cullens' would never happen, but I'd also like to point out that vampires aren't real, either! If Meyer wrote that the characters all had frogs' eyes and owls' beaks, I wouldn't care because it's a work of FICTION.... lol. It's just a story, not a documentary. Who cares????
